Asparagus, Beets, and Chicken Salad Recipes

Asparagus Topped with Turmeric Dressing

Ingredients:

1 bunch asparagus, ends trimmed
½ cup Turmeric Dressing

Directions:

Bring water to a boil in a large saucepan, put asparagus in a steamer basket, cover and steam until tender-crisp, about 4 minutes.
Meanwhile, prepare Turmeric Dressing in a small bowl. Drizzle the sauce over the asparagus. Serve warm or cold.


Spinach and Beets Salad Recipe

Ingredients:


3 cups baby spinach
1 cup quartered cooked beets
1/2 cup Turmeric Dressing
2 tablespoons chopped toasted walnuts
2 ounces crumbled goat cheese

2 tbsp dill chopped

Directions:

Toss spinach, beets and Turmeric Dressing in a salad bowl. Top with walnuts and goat cheese.


Chicken Salad with Turmeric Dressing

Ingredients:

2  cups chopped, boneless cooked chicken

2 medium apples, chopped

1/3  cup celery, diced

2tbsp  raisins

2tbsp cranberries

½ cup Turmeric Dressing

2 tbsp dill chopped

2 tbsp parsley chopped

salt and pepper to taste

Directions:

Combine all ingredients. Cover and chill.
